INGREDIENTS:
Raw Rice flour 3 cups/300 gm
Roasted fried gram 400 gm
Dry red Chillies 12 pcs
Ajwain seeds 1 tablespoon
Black Sesame Seeds 1.5 tsp
Asafoetida 2 pinches
Cold pressed Coconut oil 1 tbsp
Powdered Salt 1 tsp
Water 170 ml first+ water as needed
Hot Groundnut oil 1 tbsp
Cold pressed Groundnut oil 750 ml
Tamarind 3 inch
Transfer the roasted fried gram and red chillies to a dry mixer jar.
Grind until fine powder
Sift the ground flour and set ready.
Dry roast the raw Rice flour on low flame until hot.
Sift the roasted flour and Transfer to the mixing bowl.
Measure 2 cups of sifted fried gram contents and add.
Add 1 tbsp Ajwain seeds, Black Sesame Seeds 1.5 tsp, Asafoetida 2 pinches and Powdered Salt 1 tsp.
Pour one tbsp Coconut oil.
Add 170 ml water and start kneading.
Add water little by little and knead gently.
Knead to get a pliable and soft dough.
Heat the Groundnut oil on medium flame.
Drop a piece of 3 inch Tamarind to remove impurities if any.
Let the Tamarind got fried and came up.
Take out the Tamarind.
Take out the hot oil one tbsp and pour into the dough.
Knead again to combine.
This hot oil gives crispness to the snack.
Take one portion of the dough to fill the 3/4 th level of the murukku press.
Squeeze the filled dough in spirals randomly over the greased laddle.
Stick the ends.
Lower the squeezed spirals gently into
the hot oil. Drop 5-6 murukku pcs.
Let them deep frying until the oil bubbles subside.
Flip over to fry both sides.
Drain the murukkus and place them in a dry plate.
Repeat the process.
We will get 30 murukkus out of this quantity measured above mentioned.
