VANILLA CAKE/வெனிலா கேக்/CAKE BASE

This is a 👌  fabulous turn out vanilla cake I made during lock down days. 

This pillowy soft crumb-cake is with the outstanding Vanilla flavour, I ever relished.

This rich vanilla cake is made in Indian method.
Made with basic ingredients that are available in Indian super markets.

It is so versatile base for making so many twists of creamy layered cakes.

One more important point we have to remember, to beat the eggs atleast 10 minutes until soft peaks.

Another important matter is, make sure to sift the flour along with baking powder and cooking soda four or five times.

Let's make :

Ingredients:

Ghee one spoon
Parchment paper 8 inch
All purpose flour 175 gms
Corn flour 3 tbsp
Baking powder 1.5 tsp
Cooking soda 1/2 tsp optional
Powdered Salt 1/4 tsp
Country eggs I used 4 pcs
Powdered Sugar 
Vanilla essence 1 tsp
Powdered Sugar 175 gm
Hot Sunflower Oil 40 ml
Boiling Water 60 ml

Procedure:

Smear ghee all around cake mould of 8 inch.
Sprinkle all purpose flour and rotate the mould to spread the flour all over the sides.
Place the parchment paper. Set ready.






Sift the all purpose flour+Baking powder+cooking soda and Powdered Salt together five times.
This is important direction to make the cake soft and airy.









Set ready.

Pour egg yolks in a dry mixing bowl and beat using an electric blender until fluffy with stiff peaks.








Add Powdered Sugar and Vanilla essence and beat to blend well.







Add dry ingredients in two batches and mix and fold well to incorporate.




Heat Sunflower Oil for 2 seconds and mix with boiling water.

Pour the Sunflower Oil contents and mix again.







Fold and beat with a spoon to lock the air inside the mixture of batter.






Preheat the oven @180°C for 10 minutes.
Pour the batter to the cake mould.

Place the cake mould over the stand in the oven.
Bake for 36 minutes at 180 °C.
Take out.
Set aside to cool down.













Vanilla cake is ready.

Enjoy with Tea.
